'Heal Me' Soup


Whenever I'm a little under the weather, this is my go - to recipe to help nourish me from the inside out - and because it is so quick and simple to make! The last thing you want to do when you are sick is spend ages cooking which is why this is such a wonder recipe!

With Broccoli and Spinach to give you that much needed iron boost, Fresh Ginger to help settle your stomach and aid digestion, Chicken for your protein and Kale which is loaded with those anti - oxidants your body is craving when run down - its a win - win bowl of lovliness and always leaves me feeling a little bit renewed. So here is my take on a Thai - Style - Chicken and Veg Soup.

Ingredients

2 x pints of Chicken Stock

1 x thumb of Ginger (chopped)

2 x cloves of Garlic

1 x Courgette (Spiralized)

Handful x Long Stemmed Broccoli

Handful x Kale ( ripped)

Handful x Spinach

4 x Mushrooms (Quartered)

Handful of Sweet corn

1 x Chicken Breast

To Garnish

Juice x Half a Lime

2 x tsp of Fish Sauce

3 x Spring Onions (Chopped)

Sprinkle of Sesame Seeds (optional)

Chilli Flakes (optional)

Coriander (Chopped)

Method

1. In a pan, heat up your stock, add your Ginger , Garlic and Chicken Breast - leave to simmer for 15 minutes.

2. Remove the Chicken Breast and slice it into chunks, then re add.

3. Add the Broccoli, Spinach, Kale, Sweetcorn, mushrooms, Sprialized Courgette and heat for a further 4 minutes.

4. Stir in your lime juice and fish sauce, place into a bowl and finish of with a sprinkle of Chopped Spring onion, sesame seeds.

V'OILA! Feel better in no time!

Recipe tip! Don't forget you can swap any of these veggies out with other veggies like Peppers or Asparagus - its what ever you prefer - so make it your own!
